Quick & Easy Chicken Katsu Curry

Here are the ingredients. The chicken breasts used here total about 1.5 lbs (660 grams). Prepare your favorite curry roux and vegetables as you like.

Slice the chicken breasts in half horizontally to make two thick cutlets from each breast.

Spread mayonnaise over the chicken breasts. It's easy to squeeze it directly from the tube and spread it evenly.

Coat the chicken with panko breadcrumbs.

Fry the chicken until golden brown.

Finely chop the onions.

This time, I also added king oyster mushrooms. Finely chop them as well.

In a pot for the curry, sauté the chopped onions and mushrooms in oil.
