Cooking Instructions
- 1
Wash the cabbage and cut it into slightly thick strips.
- 2
Place in a microwave-safe container and microwave at 600W for about 2 minutes. (The image shows it in a 946ml Ziploc container.)
- 3
Remove from the microwave and let it cool until you can squeeze it by hand. (If the cabbage is still hard, microwave a bit longer as needed.)
- 4
Combine the squeezed cabbage, drained tuna, granulated dashi, and mayonnaise in a container and mix.
- 5
It's ready! You can enjoy it immediately or let it sit for a while to let the flavors meld.
- 6
The napa cabbage version turned out delicious too! Substitute cabbage with napa cabbage, tuna with bonito flakes, and add dried hijiki. Feel free to mix and match as you like.

I used sweet chili sauce plus mayonnaise to make it simple. The ponzu sauce really brings the flavors together.Just use a pinch of salt to massage the bitter melon, or else the dish will be too salty.Don't boil the bitter melon for too long.Put the onions in a bowl of water to get rid of the harsh flavor.
