Rice Balls with Salted Kelp and Cheese

The third installment in my daughter's favorite series! These are simple but frequently requested rice balls that are a staple in our home. They taste great even when cold, making them perfect for lunch boxes.

My daughter loves the combination of salted kelp and cheese. Of course, I do too! There are similar recipes out there, but I decided to measure the ingredients for these rice balls, which I usually make by eye, and share them as a note for myself.

Cut the processed cheese into small pieces. It's easier to shape if you cut it into 15 pieces (3x5).

Mix all the ingredients in a bowl. Shape into your preferred size to finish.

With sesame seeds (as shown in the top photo).

With aonori (this is the most popular in our house).

With bonito flakes.

Note: The seasoning is on the stronger side to ensure it tastes good even when cold. If you prefer a milder taste or are concerned about salt, adjust the amount of soy sauce.

I often use this processed cheese. There are many varieties, so try different flavors.
