Ingredients

  • 4large eggs whisked lightly
  • 2 tablespoonvegetable oil
  • 1medium onion chopped finely
  • 1medium tomato finely chopped
  • 1 teaspoonginger paste
  • 1 teaspoongarlic paste
  • 3-4green chilies slit
  • 1/2 teaspoonturmeric powder
  • 1/3 cupbell pepper chopped
  • 1/2 teaspooncumin powder
  • 1/4 teaspoonwhole cumin seeds
  • 1/4 cupchopped coriander leaves
  • 1 tablespoonchopped spring onions for garnishing(optional)
  • 1/2 teaspoon red chilli powder(optional)
  • to tasteSalt

Steps

    Break the eggs in a bowl carefully such that there are no shells. Add salt to the eggs and whisk them.

  2. 2

    Take a pan and add oil to it. Once the oil is hot add the cumin seeds.

  3. 3

    As the cumin seeds splutter, add the chopped onions and capsicum and fry till they turn little soft.

  4. 4

    Add the ginger garlic paste, green chilies, tomatoes, turmeric powder, cumin powder, red chilli powder and stir for 1 minute.

  5. 5

    Add about 1 tablespoon of water and keep stirring till you see oil leaving the sides of the pan.

  6. 6

    Now pour the eggs and continue stirring vigorously along with the spices till all the bigger chunks of egg are broken to smaller pieces.

  7. 7

    Add the chopped cilantro to the egg bhurjee and mix properly.

  8. 8

    Garnish with chopped spring onions and serve with rice, bread or chapatti.
