The origin of this recipe
It's simple, but I remade leftover karaage for lunch into an egg bowl, and my husband loved it.

1/4onion
1-2shiitake mushrooms
1large egg
1/2 cupdashi stock (about 100 ml)
1 tablespoonsake
1 tablespoonmirin
1 tablespoonsoy sauce
1 teaspoonsugar
1 bowlcooked rice
Optional: green onions, nori, etc

Cut the karaage into bite-sized pieces. If cold, you can warm it slightly in the microwave. Slice the onion and shiitake mushrooms (or any preferred mushrooms).

Add the dashi stock mixture to a frying pan and bring to a boil, then add the onion and shiitake mushrooms to simmer.

Add the karaage and simmer for about 2 minutes.

Pour in the beaten egg. Once it starts to set, turn off the heat and cover to let it steam.

Serve warm rice in a bowl and top with the egg and karaage mixture. Optionally, add green onions, mitsuba, nori, or sprinkle with shichimi spice.
