Steps

Prepare kinshi tamago (shredded egg crepe) in advance. For the recipe, see cookpad.com (Recipe ID: 18626139).

Cut the chicken into bite-sized pieces and place in a plastic bag. Add sake and salt, massage to coat, then add potato starch and toss to coat evenly.

Heat vegetable oil in a skillet. Place the chicken skin-side down and cook over medium heat until browned. Flip and cook on low heat until cooked through.

Add the sauce ingredients and simmer until bubbling, then coat the chicken evenly with the sauce.

Spoon rice into bowls and top each with half of the kinshi tamago.

Place half of the chicken on top of each bowl, then garnish with green onion and sprinkle with sesame seeds. Add pickled shibazuke on the side if you like.
