Ingredients

  • Winter Melon Tea
  • 1 block(about 575g) winter melon tea brick
  • about 17 cups water (for brewing winter melon tea)
  • 300 gtapioca pearls (boba)
  • 8 1/2 cupswater (for cooking tapioca pearls)
  • Honey or syrup, to taste

    1. First, make the winter melon tea. Bring the water to a boil over high heat, then add the winter melon tea brick. Reduce to low heat and simmer for 10 minutes. (If not consumed immediately, let it cool and store in a bottle in the fridge or freeze into ice cubes.)

    2. To cook the tapioca pearls: Bring the water to a boil over high heat, gradually add the tapioca pearls while stirring, then reduce to medium-low heat and cook for 10 minutes.

    3. Transfer the partially cooked tapioca pearls to a rice cooker. Add 1 cup of water to the outer pot, cook until the switch flips, then let it sit for 1 hour. Add another 1/2 cup of water to the outer pot, cook again until the switch flips, then let it sit for another hour.

    4. After cooking, rinse the tapioca pearls with cold boiled water using a slotted spoon to remove the sticky outer layer.

    5. Once done, mix with honey or syrup to taste.

    6. To serve the winter melon tea with tapioca pearls: Combine the desired amount of tapioca pearls with winter melon tea (you can add ice cubes) and enjoy.
