This ramen uses enoki mushrooms as noodles, making it super healthy. It’s filling but lower in calories and gluten-free. Recipe background: I tried adding enoki mushrooms as a topping at a white broth glass noodle shop and loved it, so I decided to make a version using only enoki mushrooms so I could enjoy plenty of them.

Trim the root ends off the enoki mushrooms, then separate them into individual strands.

Combine the pork bone soup base and chicken bouillon powder to make the white broth.

Add the enoki mushrooms to the broth and simmer for 2 minutes. If you want to add vegetables or other toppings, add them at this time and simmer together.
