Poke holes in the chicken thigh with a fork to help the marinade soak in. Place the chicken and all marinade ingredients (marked with ★) in a zip-top bag. You can marinate overnight or for about 15 minutes.

While the chicken is marinating, prepare the side dishes. For this bento, make yakisoba noodles and tamagoyaki.

Add a little oil to a frying pan. Place the marinated chicken skin-side down in the pan over low heat, cover with a lid, and cook. Do not add the leftover marinade from the bag yet.

Watch carefully to avoid burning. When the skin is golden brown, flip the chicken. Remove the lid, pour the leftover marinade from the bag into the pan, and simmer the chicken in the sauce.

When the sauce thickens and the chicken is glossy and well-coated, it's done!

Place the chicken on top of the rice and pack the side dishes to complete your bento. Drizzle extra sauce over the rice for even more flavor!
