Many years ago, during a trip to Spain, I fell in love with a tropical cocktail called Piña Colada. It's addictive because it's refreshing, sweet, and easy to drink! Fortunately, a kind bartender introduced me to this lighter version. It uses unsweetened coconut milk, which can be used in drinks or desserts, instead of the usual high-fat, sugary cream of coconut. You can adjust the ratio of rum, pineapple juice, and coconut milk to your liking. However, since rum is a strong spirit, don't overdo it. Malibu has an alcohol content of 21%, while white rum is over 35%. As with any alcoholic beverage, one or two glasses are ideal.

  • 1 cupcrushed ice (tall glass size)
  • Cocktail tools
  • White rum
  • Malibu coconut-flavored rum
  • Coconut milk for drinking or desserts; if unavailable, use cream of coconut for cocktails
  • Pineapple juice

    Add half a cup of crushed ice to the shaker, then measure and pour in 1 part white rum, 1 part Malibu, 4 parts pineapple juice, and 2 parts coconut milk.

    Secure the lid tightly and shake vigorously until the shaker is frosty. Carefully open the lid and pour into a tall glass with half a cup of crushed ice. Garnish with a pineapple slice and a long straw.
