  • 4 slices(about 1.1 lbs) pork loin
  • as neededSweet potato starch,
  • Marinade
  • 1 teaspoonsalt
  • 1 tablespoonsugar
  • 5 clovesgarlic, minced
  • 1little egg white
  • 11 oz(about 330 ml) beer
  • 1/3 cup(about 50 grams) cake flour
  • 1/3 cup(about 50 grams) cornstarch
  • 2 1/3 tablespoons(about 35 ml) heavy cream

    (1) Wash the pork loin slices and pat dry with paper towels. Pound them thin with a meat mallet or the back of a knife.

    (2) Add the marinade and let it marinate until flavorful (about 2 to 4 hours, depending on thickness).

    (3) Coat with sweet potato starch (slightly dampened), and fry in oil heated to 300°F to 320°F until golden brown. Remove from oil. You can cut them into pieces if you prefer. Tips: This fried dish emphasizes using beer for seasoning, which gives it a unique beer flavor.
