You can make delicious paitan ramen just by simmering chicken bones! It's surprisingly easy. The noodles and toppings are store-bought (haha).

Ingredients

  • For the Shio Tare (Salt Seasoning)
  • 3 tablespoonssake (about 45 ml)
  • 1 teaspoonsoy sauce (about 5 ml)
  • 1/2 tablespoonsalt (about 7 grams)
  • 1/3 teaspoonhoney (about 2 grams)
  • as neededKombu (dried kelp),
  • 1 teaspoonmirin (about 5 ml)
  • About 1/3 teaspoon MSG (Ajinomoto)
  • For the Soup
  • 2chicken carcasses (just under 2.2 lbs or about 1 kg)
  • 2 clovesgarlic (or to taste)
  • 1green onion top (white part)
  • as neededVegetable scraps, such as cabbage cores,
  • 1 pieceginger

Steps

  1. 1

    To make the shio tare, combine all the ingredients and bring to a gentle simmer over low heat.

    Parboil the chicken carcasses until boiling.

    Rinse the parboiled chicken bones thoroughly. Then, cover with enough water to submerge and bring to a boil again, skimming off any scum.

    Pressure cook for 1 hour.

    Release the pressure, remove the lid, add garlic, green onion top, and vegetables. Simmer over high heat, stirring occasionally.

    Continue boiling over high heat until the liquid is reduced by half. Stir from the bottom occasionally to prevent burning.

    If you want a richer broth, add more water and reduce again by half.

    Strain the broth to finish the base soup.

    Combine the shio tare and soup to your preferred saltiness. (Note: The shio tare is very salty, so add a little at a time.)

  10. 10

    Serve with noodles and your favorite toppings!
