This is the kind of thing you cook when you're tired, there's not much in the fridge, and you just want a decent meal. I encourage you to adjust the recipe to include whatever you've got on hand.

Ingredients

  • Olive oil
  • 4medium potatoes
  • 1yellow onion
  • 1 bunchkale
  • 1 lbground beef
  • 1/2 lbfrozen peas
  • Salt
  • Pepper

Steps

  1. 1

    Heat a cast iron pan on medium-low with a little oil.

  2. 2

    Peel and dice the potatoes nice and fine. Add them to the pan. Stir every 5 min or so until they're browned.

    Slice up the onion and add it to the pan. Continue stirring periodically until the onion is tender.

    Clean kale and remove stems. Chiffonade, and add to the pan.

    Add the beef. Stir periodically until browned.

    Add the frozen peas. Stir.

    Season with salt and pepper and serve. I topped it with some pickles and sriracha.
