Add all the ingredients marked with ☆ (soy sauce, mirin, sake, sugar) to a skillet and simmer until slightly thickened. Cut the pork into 2–3 pieces, season with salt and pepper, and sandwich a slice of cheese between two pieces of pork.

Dredge the pork and cheese sandwiches in flour, then dip in beaten egg, then coat with panko breadcrumbs. Pour about 1/4 inch (5 mm) of oil into a skillet and fry until golden brown.

Briefly dip the fried cutlets into the sauce from step 1, just enough to lightly coat them, similar to kushikatsu.

Spoon the rice into a bowl, place the cutlets on top, and drizzle with any remaining sauce. Enjoy!
