Perfect for when you want to eat more vegetables or need a quick meal.

Cut all the vegetables and pork into bite-sized pieces.

Heat a skillet and add oil. Stir-fry the pork first. Once it starts to cook, add the vegetables that take longer to cook first, then add the rest in order.

When the vegetables start to soften, add the sugar and continue stir-frying.

Once everything is mostly cooked, push the vegetables to the side of the skillet and add the udon noodles to the empty space.

Add the sake and white dashi, cover with a lid, and steam for about 1 minute.

Remove the lid, loosen the udon noodles, and mix them with the vegetables. Add the soy sauce and stir-fry to let the moisture evaporate.

When the udon is soft, the vegetables are cooked through, and most of the liquid is gone, it's ready to serve.
