Couscous is a 100% traditional Algerian dish and is considered one of the most important Algerian meals, often served during holidays and special occasions.

In a large pot, add the chicken or meat, oil, salt, and sliced onions. Sauté until the onions are soft.

Add the chopped carrots and turnips (cut into long pieces), grated tomato, tomato paste, minced garlic, spices, and paprika. Pour in water to cover and bring to a simmer.

When the vegetables are halfway cooked, add the zucchini. Rinse the couscous with warm water, then place it in a steamer basket (couscoussier) until it dries. Drizzle with oil, fluff, and return it to the steamer basket. Place the basket over the pot so the couscous steams. Remove, sprinkle with water, and fluff by hand.

Add salt and oil to the couscous, return it to the pot, and steam it a second time. Remove, drizzle with oil, and set aside.

Once the chicken is cooked (it cooks quickly), remove it and let the sauce continue to simmer until the vegetables are tender. Serve the couscous with the sauce and vegetables.
