Ingredients

Serves 1 serving
  1. 3.5 oz (100 g)boneless, skinless chicken thigh
  2. 1 tablespoonsoy sauce
  3. 1 tablespoonhoney
  4. 1 tablespoonsake (Japanese rice wine)
  5. 1 bowlcooked rice (about 3/4 cup, 150g)
  6. 3thin slices kabocha squash (Japanese pumpkin)
  7. 1thin slice tomato
  8. 1 leaflettuce
  9. Mayonnaise to taste (optional: whole grain mustard)
  10. as neededOil

Steps

  1. 1

    For the teriyaki chicken:
    Heat oil in a skillet. Add the chicken thigh, cover, and cook until both sides are golden brown.

  2. 2

    Wipe off excess fat, then add the combined soy sauce, honey, and sake. Simmer until the sauce thickens.

  3. 3

    For the rice:
    Line an 8 cm (about 3-inch) ramekin with plastic wrap. Press in half the rice to form a patty. Repeat with the remaining rice to make two patties.

  4. 4

    Lightly oil a skillet and cook the rice patties on both sides until golden. In the same pan, cook the kabocha slices until tender.

  5. 5

    To assemble the rice burger:
    Spread mayonnaise on one side of a rice patty and, if desired, whole grain mustard on the other patty.

  6. 6

    Layer lettuce, kabocha, tomato, and sliced teriyaki chicken between the rice patties to make a sandwich.
