Ingredients

Serves 10 servings
  1. [Cheese Cookies]
  2. 2/3 cupall-purpose flour (about 70g)
  3. 2 tablespoonsgranulated sugar (about 20g)
  4. 1 tablespoonegg (about 20g)
  5. 3 1/2 tablespoonsunsalted butter (about 50g)
  6. 1/4 cupcheese powder (about 25g)
  7. [Black Tea Cookies]
  8. 2/3 cupall-purpose flour (about 70g)
  9. 1/4 cupgranulated sugar (about 30g)
  10. 1 tablespoonegg (about 20g)
  11. 4 tablespoonsunsalted butter (about 60g)
  12. 2 teaspoonsblack tea leaves (about 10g)

Steps

  1. 1

    Make the cheese dough. Soften the unsalted butter in a bowl. Add the granulated sugar and mix well, then gradually add the egg.

    Sift together the all-purpose flour and cheese powder, add to the mixture, and lightly combine.

  3. 3

    Shape into a log about 1x2 inches and wrap in parchment paper, then chill in the refrigerator.

  4. 4

    Make the black tea dough in the same way and chill.

  5. 5

    Take out the dough, layer the two types, and shape into a square column about 2x2 inches.

  6. 6

    Cut in half lengthwise, combine to form a checkerboard pattern, and chill again in the refrigerator.

  7. 7

    Cut the dough into slices about 1/3 inch thick and bake in a preheated oven at 340°F for 15-17 minutes.
