Ingredients

Serves 3–4 servings
  1. 3 3/4 cupswater (900 ml)
  2. 1 piecedried kelp (kombu)
  3. 3 tablespoonssoy sauce
  4. 4 teaspoonschicken bouillon granules
  5. 4 tablespoonssake
  6. 1 tablespoonsugar
  7. 1 tablespoongrated ginger
  8. 2 tablespoonsground sesame seeds
  9. 2 tablespoonssesame oil
  10. Assorted ingredients of your choice

  12. Seafood and meat of your choice
  13. 1 blocktofu
  14. Dipping sauces like sesame sauce or ponzu, as desired
  15. Condiments of your choice

Steps

  1. 1

    Pour the water into a pot and heat. Add the piece of dried kelp. Once it comes to a boil, reduce the heat and simmer until the kelp softens.

    Add the soy sauce, chicken bouillon granules, sake, sugar, grated ginger, ground sesame seeds, and sesame oil. Stir well. When it comes to a boil, your hot pot broth is ready.

    Add vegetables that take longer to cook, like carrots and daikon radish, first. After about 5 minutes, add meat, seafood, tofu, and the rest of the vegetables.

    If any foam or scum appears on the surface, skim it off with a ladle.

    Enjoy with your favorite dipping sauces like ponzu or sesame sauce, and condiments such as shichimi pepper.
