Remake Curry Udon for the Day After Curry

The day after making curry, turn your leftovers into Japanese-style curry udon! This is a classic, but I made it into a simple recipe.

My daughter was away for training, but I accidentally made enough curry for four people, so we had leftovers. Usually, I make a doria with leftover curry, but since tonight is cold, I decided to make curry udon instead.

The day after making curry, turn your leftovers into Japanese-style curry udon! This is a classic, but I made it into a simple recipe.

Make curry as usual.

Use leftover curry from the previous day. Transfer it to a bowl and refrigerate until ready to use.

Cut the fried tofu into strips.

Slice the shiitake mushrooms into 1/4-inch (about 5 mm) pieces. You can use other mushrooms if you like.

Add the water, fried tofu, and shiitake mushrooms to a pot and heat.

Add about 1 ladleful of leftover curry to the pot.

Heat thoroughly.

Cook the udon noodles and drain. If using packaged steamed udon, you can microwave them or use as is.

Add the udon noodles to the pot.

Heat until it comes back to a boil.

Serve in a bowl.

Top with chopped green onions or roughly chopped mitsuba, and enjoy!
