    It's very simple! Just soak them in hot water. Cut the potatoes according to your needs. This time, it's for curry.

    Bring a pot of water to a boil (make sure there's enough water), and as soon as it boils, "turn off the heat immediately" and add the potatoes.

    Let the potatoes sit for at least 20 minutes! That's it. After that, use them as you normally would. The top image is after soaking!

    Note: With this method, the pectin on the surface of the potatoes binds, so they don't fall apart. I saw this on TV, truly a happy accident!
