Ingredients

  1. 1 cupbrown rice
  2. 1 cupchicken broth
  3. 1small zuchini
  4. 1red pepper
  5. 1green pepper
  6. 1/2large red onion
  7. 1 cupdiced carrot
  8. 1 (15 oz)can black beans
  9. 1 tspcumin
  10. 16 ozmild red enchilada sauce divided 2 cupa
  11. 1.5 lbschicken breast
  12. Salt and pepper
  13. 1 cupcheddar cheee
  14. 1 cupcorn

Cooking Instructions

    Stir rice, broth, zuchini, red peppers, green peppers,onion, carrot, beans, cumin, 1/2 cup enchilada sauce and salt and pepper in crock pot. Top with chicken more salt and pepper. Pour 1/2 cup enchilada sauce overtop.cover and cook for 3 hrs.

    Stir after 2 hrs and check rice doneness. Cook till done. Remove chicken, shred add back and add enchilada sauce. Stir in shredded cheese and frozen corn. Cover and cook on low for 15-20 min.
