Ingredients

12 servings
  • 32 ozMexican shredded cheese
  • 5 lbschicken breast
  • 1 cuptaco seasoning
  • 2 cansRotel
  • 1large onion
  • 2 cansrefried beans
  • 4 cupswater
  • 40stand up taco shells

Steps

  1. 1

    Cut chicken into fajita strips

  2. 2

    Place chicken in skillet and brown

  3. 3

    Add taco seasoning and water and let simmer

  4. 4

    Place taco shells in large pan

  5. 5

    Open and drain Rotel

  6. 6

    Chop up onion

  7. 7

    Cook onions and Rotel together until moisture is gone

  8. 8

    Open refried beans and put in ziplock bag. Cut corner off and squeeze out a line in each taco shell

  9. 9

    Add onions and Rotel to shells

  10. 10

    Drain chicken and add to shells

  11. 11

    Cover taco shells with cheese and bake 400 for 15 min until cheese is melted
