Leek Tart with Skyr and Roquefort

Preheat the oven to 450°F (230°C). Prepare all the ingredients.

Slice the leeks into thin rounds and sauté them in a little olive oil over low heat.

In a mixing bowl, combine the Skyr and eggs, and season with pepper. Cut the Roquefort into small cubes.

Place the puff pastry in a 11-inch (28 cm) tart pan and prick the bottom with a fork. Pour in the Skyr mixture, then evenly distribute the leeks and Roquefort on top. Bake on the lower rack of the oven for 30 minutes. About 10 minutes before the end of baking, place the 4 cocktail tomatoes on top of the tart.
