Zesty lemon/lime cake
I accidentally bought a kg of lime and this is an easy way to use some them. This recipe was inspired by Phils Kitchen-youtube.
Steps

Grate your lime/lemon zest finely and set aside. Squeeze the juice of the limes to get 2 tablespoons

Cream the butter with sugar using a wooden spoon until its well mixed. Then add the lime zest and fold in

Add the eggs one by one and use a Whisk to mix well
- 4
Add yoghurt, lime juice and cooking oil and mix well.

Seive the flour and baking powder into the mixture and fold in till all the flour is mixed in. The mixture will be dense
- 6
Pour the mixture into a baking tin and bake in a pre heated oven for 30- 40 mins- check if done using a tooth pick. If it comes out clean, the cake is ready. Enjoy!
