Grapes are in season now and it takes few minutes to make this yummy chutney. In this recipe, fresh green grapes are tempered with whole spices and then cooked with powdered spices and sugar or jaggery. Other than grapes, raisins, cashewnuts, dry roasted Indian spices make this chutney flavourful. Grapes Chutney or Angoor Ki Launji is a sweet, sour,tangy chutney .It is ready within 15 to 20 minutes and the best accompaniment to Indian food.

Slice the grapes into half.Heat 1 tsp oil in a pan. Sprinkle mustard seeds and 1 broken dry red chilli. When they splutter, add 1 bay leaf.Stir and add the grapes to the pan. Stir fry the grapes for 2 minutes.Then add salt, black or rock salt and sugar to taste.

Meanwhile dry roast cumin,coriander,fennel seeds and dry red chilli in a separate pan. When they release a nice aroma switch off flame. Cool and dry grind to a powder.Use 1 tsp of this powdered masala and store the rest in an airtight container.

Add bay leaf and half cup water to the stir fried grapes along with sugar.The mixture will come to a boil, start frothing and then bubbling merrily while reducing gradually. Keep watch over the syrup as it thickens.Add cashewnuts and later raisins and stir.

When the chutney attains one string consistency, add lemon juice and tamarind paste, one teaspoon dry ground masala and give it a stir.Pour in a bowl.Cool, chill and serve as a condiment along with the food served and relish the flavours of a sweet, sour and tangy green grapes chutney..
