Pork Tenderloin with Boursin® and Mushrooms

Preheat the oven to 350°F (180°C). Prepare a Dutch oven or an oven-safe skillet.

Generously season the pork tenderloin with salt and pepper on all sides to enhance the flavor.

Heat a drizzle of olive oil in the Dutch oven or skillet over high heat. When the oil is hot, sear the pork tenderloin on all sides until nicely browned.

Remove the meat from the pan and place it on a plate. Cover with aluminum foil to keep warm.

Peel and finely chop the garlic and shallot. Clean the mushrooms and slice them.

In the same pan, without washing it, sauté the garlic and shallot over medium heat until translucent.

Increase the heat, add the sliced mushrooms, and sauté until they are golden and their liquid has evaporated.

Deglaze the pan with the white wine, scraping up any browned bits with a wooden spoon. Let the liquid reduce by half to concentrate the flavors.

Return the pork tenderloin to the pan and top with pieces of Boursin® cheese so it melts and infuses the dish with flavor.

Place the pan in the oven and bake for 20 to 25 minutes, depending on the thickness of the meat and your preferred doneness (slightly pink or well done).

Once cooked, remove the pork tenderloin, slice it, and arrange on a serving platter. Spoon the sauce over the top and sprinkle with chopped fresh parsley.
