Rinse and pat dry the chicken thighs.
In a shallow dish, combine the flour, salt, black pepper, paprika, garlic powder, and onion powder.
In another shallow dish, place the beaten eggs.
In a third shallow dish, place the breadcrumbs - 2
Dredge each chicken in the seasoned flour, shaking off any excess.
Dip the floured chicken into the beaten eggs.
Finally, coat the chicken in the breadcrumbs, pressing lightly to ensure the breadcrumbs adhere well.

In a large skillet, heat the vegetable oil or butter over medium heat.
Add the breaded chicken thighs to the skillet and fry until golden brown and crispy on both sides, about 5-7 minutes per side.
Transfer the fried chicken to a baking sheet and finish cooking in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C). - 4
Prepare the Gravy:
In the same skillet, remove excess oil, leaving about 2 tablespoons.
Add the butter to the skillet and melt over medium heat.
Stir in the flour and cook for 1-2 minutes to form a roux.
Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the skillet.
Add the heavy cream and continue to whisk until the gravy is smooth and thickened.

Serve the fried chicken thighs with the creamy gravy drizzled over the top.
If desired, serve with the fried bananas or your choice of side dish such as mashed potatoes or corn fritters. I served mine with fried Irish potatoes and a scrambled egg.
