Ingredients

Serves 2 servings
  • Ratatouille:
  • 7 ozchorizo (about 200 grams),
  • 1eggplant,
  • 1zucchini,
  • 1red bell pepper,
  • 4tomatoes,
  • 1onion,
  • 2 clovesgarlic
  • Flan:
  • 1 headbroccoli,
  • 2 ozsmoked salmon (about 60 grams),
  • 2eggs,
  • 2/3 cupmilk (about 150 grams),
  • 1/3 cupflour (about 40 grams, or use 2 1/2 tablespoons flour and 2 1/2 tablespoons cornstarch to lighten it),
  • Spices of your choice

    For the ratatouille, sauté the onion and garlic cloves.

  2. 2

    Add the diced chorizo and continue cooking for about 5 minutes.

  3. 3

    Add all the vegetables, cut in half, and cook over low to medium heat until everything is tender.

  4. 4

    Season with salt and pepper. Serve hot, or cold if you prefer.

  5. 5

    For the flan: Cut the broccoli into florets and steam for about 10 minutes. Cut the salmon into small cubes and set aside.

  6. 6

    Whisk the two eggs until frothy, then add the flour.

  7. 7

    Gradually add the milk and mix well.

  8. 8

    Season with salt, pepper, and spices like parsley, dill, or others, plus a little lemon juice.

    Bake for about 45 minutes at 350°F (180°C).
