Heat oil in a pan.Add all the spices, salt, and mashed potatoes. Mix well.

Cook for a few minutes and garnish with coriander leaves. Let the filling cool.

Had homemade batter. (Soaked 1 cup urad dal with 2.5 cups idli rice previous night, prepared batter in the morning and kept for fermention till dinner time.)

Take about 250 gms idli batter in a bowl and add salt to taste, 1/2 tsp baking soda and 1/2 tbsp lemon juice. Mix till bubbles are visible.

Grease the idli molds. (We wanted big idlis like street so we used bowls.) place them into the steamer.

Pour 1 big spoon of idli batter into each mold to cover the bottom.

Place a small portion of the potato filling in the center of each mold.

Cover the filling with another spoonful of idli batter. Steam the idlis for 7 to 8 minutes.

Remove the idlis from the molds and serve hot with chutney and sambar.
