Ingredients

  1. 1egg
  2. 200 mlmilk
  3. 60 mlvegetable oil
  4. 250 mlcake flour
  5. 10 mlbaking powder
  6. 2,5 mlsalt
  7. 2,5 mlpepper
  8. 4 sprigsfresh corinader
  9. 100 gprawns, shelled and deveined
  10. 250 mlflour
  11. 125 mlcornflakes, crushed
  12. 125 mldessicated coconut
  13. 15 mlfish spice
  14. 5 mlpaprika
  15. 5 mlgarlic powder
  16. 2,5 mlground cumin
  17. 2,5 mlground coriander
  18. 4eggs, beaten
  19. oil to fry

    For the Waffles: Separate the egg and whisk the white to soft peak stage. In a separate jug combine the egg yolk, milk and vegetable oil and beat until well combined.

    In a bowl combine the flour, baking powder, salt and pepper. whisk in the jug of wet ingredients. fold in egg white into this mixture and set aside.

  3. 3

    In a waffle press or silicon mould place corinader leaves and pour over the mixture. continue to cook in waffle press until ready or bake in mould in the oven for 15-20 minutes.

    For prawns: Dust the prawns in flour and in a bowl combine the cornflakes, coconut and spices.

  5. 5

    Dip each prawn in the egg then into the coconut crumbing mixture. continue until all prawns are coated.

  6. 6

    Heat the oil in a pan and fry the prawns in small batches. remove and place onto kitchen paper to absorb extra oils.

  7. 7

    Serve the waffles with the crumbed prawns and top with any sauce of your choice
