Chop the onion, tomato, and serrano peppers.

Slice the red onion and habanero pepper. Squeeze the juice from the lemons over them, add a pinch of salt and pepper, and set aside.

Sauté the onion, tomato, and serrano peppers. Once the tomato is soft, add the canned sardines with their sauce. Let it cook until slightly reduced, then season with a little bouillon if desired.

Slice the cabbage and grate the carrot.

Lightly grease a skillet with a little oil and cooking spray. Warm the tortillas for a few minutes.

Once the tortillas are crispy, fill them with the sardine mixture and let them brown on both sides.

Mix the mayonnaise with the sour cream, a few drops of lemon juice, a few drops of Maggi seasoning sauce, and a little pepper. Stir to combine.
