Parmesan and Parsley oven roasted Potatoes

In Large pot bring salted water to a boil. While waiting for the water to boil: Peel potatoes and cut into cubes.

Add potatoes to water and cook until tender, not as soft as for mashed potatoes. Drain potatoes and place in 9x13" baking dish. Add melted butter, salt and pepper to taste, garlic, onion powder and parsley. Stir to coat potatoes well.

Sprinkle the top with Parmesan Cheese. Bake in a 400 degree oven for @ 20-30 minutes. For crispier potatoes you can put under broiler for 3-4 minutes. Keep a close eye so they don't burn.
