Sunshine Watermelon or Yellow Rind Watermelon Salad

This is Yellow rind Watermelon and similar to the Green one in terms of taste and texture. Both have Red flesh and rich in Vitamin C to improve immunity, boost Collagen production and reduce inflammations. (These are entirely different from the other variety which is grown in South Africa and Uzbekistan where the flesh is Yellow and are extremely rare and difficult to get in the local markets). These also provide Potassium to balance fluid levels in the body. Vitamin A to maintain healthy organ functioning, Vitamin B5, also called Pantothenic Acid and Copper to produce Red blood cells. Besides all these Vitamins and Minerals, Sunshine Watermelons contain water for hydration.
These are oval to oblong in shape and has a Yellow to Canary Yellow in colour. And are basically seedless. But sometimes one or two under developed seeds are seen. These are available in Summer through early fall.

Sunshine Watermelons are a modern American variety belonging to the Cucurbitaceae family. These can be used in Desserts, Salads, Ice-creams, Yoghurt, Sorbet etc. These can be incorporated into Juices and Smoothies too. Lassi or Indian Shake is one more addition to the long list of things that can be done with it and enjoyed with family and friends. This one is a simple Salad here.

    Wash and cut the yellow rind watermelon as desired. I cut it into medium sized triangles.

    Arrange them in a serving platter. Squeeze the lemon juice and sprinkle some pepper. That's it.

    Delicious and healthy salad is all done. It can be enjoyed chilled. Refrigerate before and then enjoy it right away after cutting it.
