Today we made this salmorejo at the office and it couldn’t have turned out more delicious! I think it’s become my absolute favorite! The mango adds such a great touch. You have to try it!

Today we made this salmorejo at the office and it couldn’t have turned out more delicious! I think it’s become my absolute favorite! The mango adds such a great touch. You have to try it!

Wash and cut the tomatoes, removing the core, and set aside. Peel and cut the mango separately.

Blend the tomatoes on high speed. Once smooth, add the mango and continue blending for a few minutes until the mixture is as smooth as possible.

Add the bread and let it soak in the tomato and mango mixture for a bit. Meanwhile, peel the garlic clove and remove the core.

Blend again on high speed. With the blender running, slowly add the salt and olive oil in a thin stream. This will help emulsify the mixture and give it a better texture.

Chill for a few hours, then serve with diced ham, hard-boiled egg, and a drizzle of olive oil. Delicious!
