Grilled Chicken Leg on Cabbage
I’ll have this on my menu at least twice every month. It is quick and easy, and a complete meal in itself.

Halve your cabbage and from the inside, slice an inch thick slab. Make marinade by combining oil, chicken spice, white pepper, paprika, and salt

Arrange cabbage slices in the pan. Generously brush marinade over the cabbage to get it slightly soaked

Pat your chicken dry and cut slits into it. Liberally brush marinade all over it, making sure to get into the slits to lock in the flavor. Let chicken marinate for at least an hour

Preheat oven at 200C

Place chicken skin side-up over the cabbage, brush on any remaining marinade. Bake for 45- 60 minutes or until cooked through

Serve as a complete meal or add a side of sauteed vegetables. I served mine with sweet fried plantains
