Impossible Coconut Pie

I hesitate to call this dessert a ‘Pie’ as it has no pastry, but it is called so. Absolutely easy and ‘Impossible’ to go wrong. There are many slightly different recipes and you might have your own. This is my recipe that is just right for my 22.5cm Pyrex pie dish. Some people use Coconut Milk but I use regular dairy Milk because I always have it.

Preheat oven to 170℃. Butter a pie dish and place it on a baking tray. *I used 22.5cm Pie Dish.

Mix all ingredients in a mixing bowl and pour the mixture, which is very runny, into the prepared pie dish.

*Note: You can add 1 teaspoon Vanilla Extract instead of Lemon Zest and Juice. In that case, add extra 50ml Milk as well. Sugar can be 1/2 cup for Vanilla version.

Bake for 45 to 50 minutes OR until cooked and nicely browned.

Cool slightly OR completely. I like it cold. Dust with Icing Sugar before serve. *Note: It is a good idea to serve with whipped Cream.
