First, place a saucepan over medium heat with the cup of sugar and 1 tablespoon lemon juice. Let it cook until golden brown, then pour the caramel into the bottom of your baking dish.

In a bowl, combine all the remaining ingredients and beat well until smooth.

Pour the mixture into the prepared baking dish. Bake in a water bath (bain-marie) in a preheated oven at 350°F (180°C), with both top and bottom heat, for 45 to 50 minutes. Place the baking dish in a larger pan filled with hot water halfway up the sides. When the center is still slightly jiggly, turn off the oven and leave the door slightly open. Let it cool, then refrigerate. I made mine at night.
