A cool and refreshing mint soup made with zucchini and peas.

Sauté the chopped onion in olive oil.

Add the diced zucchini and cook over high heat for 5 minutes.

Add the peas, stir, and season with salt and pepper.

Pour in 4 1/4 cups water (1 liter), bring to a boil, then cover and simmer for 20 minutes.

Let cool slightly, add the mint leaves, then blend with an immersion blender.

Strain the soup through a fine mesh sieve for a smooth texture and chill in the refrigerator before serving.
