Washed & chopped the plums and remove the seeds.

Heat oil in a pan and add mustard seeds. Allow the seeds to splutter.

Then add cumin seeds, chopped garlic cloves, fennel seeds and curry leaves and saute for 1-2 minutes.

Add chopped plums. Add red chilli powder, turmeric powder, ginger powder, garam masala powder, salt and mix well.

Plums will release some of their own water. While stirring constantly, mash plum by spatula. Add 1-2 tbsp of water if you feel the mixture is sticking to the pan. But avoid adding too much as it will make the chutney watery.

Cover and cook on low heat for 10-15 minutes until the plums are soft. Keep stirring in between so that the mixture does not stick to the pan. Also mash the plum by spatula in between

Then remove the lid. Add jaggery to it and mix. Cover and cook on low flame for 3-5 minutes.

Remove the lid and cook on medium heat for 2-3 minutes, stirring constantly until it reaches the desired thickness.

Switch off the flame, the chutney will thicken a bit after cooling.
Plum chutney is ready. It tastes like tamarind chutney. Serve this tasty chutney with roti and rice. - 10
Allow to cool completely before storing in an airtight container in the refrigerator.
