Make the starter: Mix the starter ingredients together. Let sit at room temperature for 1 hour, then refrigerate for 12 hours, or use after 4 hours at room temperature.

Combine the starter and all main dough ingredients except the butter. Mix until a rough dough forms. Add the butter and knead until the dough is smooth and elastic.

Let the dough rise at room temperature for about 1 hour, or until doubled in size.

Divide the dough into 6 pieces. Shape each into a ball and let rest for 20 minutes.

Roll each piece into a rectangle, with the width matching the length of the hot dog.

Place a hot dog on each rectangle and roll up.

Cut each roll into 10 pieces, but do not cut all the way through the bottom.

Twist and arrange the pieces so the hot dog faces up.

Let the shaped dough rise for about 50 minutes, until puffy.

Brush with egg wash and top with pork floss.
