Ingredients

  • The Sauce
  • 3garlic cloves
  • 1small brown onion, thinly sliced
  • 1red chilli pepper, thinly sliced
  • 1 tintomatoes (400g)
  • 1 tbsp(heaped) tomato puree
  • 1 tbspItalian herbs
  • fresh cracked pepper
  • flaked salt
  • The Rest
  • 2 linkscooking chorizo sausage (200g)
  • 250 glinguine or spaghetti
  • Olive oil, for frying

    Some ingredients.

    One sauce pan for pasta. Cook per packet instructions. Don't forget to salt. Retain some pasta water for later.

  3. 3

    One pan for frying chorizo. Chop or cube the chorizo. Fry in oil. Shouldn't take more than 4 mins. Keep the chorizo oil.

  4. 4

    One pan for making the red sauce. Fry onions and garlic together first. 2-4 mins. Then chilli. Then add chopped tomato, and tomato puree.

  5. 5

    Add fried chorizo to the tomato sauce.

  6. 6

    Combine with pasta. Finish with some parmesan.

  7. 7

    Pour some of the chorizo oil into the red sauce towards the end.
