Ingredients

  1. 1 Cuprice
  2. 1 Cupchopped Capsicum, Red & Yellow Bell pepper, Red Cabbage, Carrot
  3. 1/2 CupSweet corn & Green peas
  4. 2Medium sized potatoes
  5. Olive oil
  6. Basil
  7. Oregano
  8. Salt
  9. Pepper
  10. 2 tspGinger - grated
  11. 1 tbspTomato ketchup

Steps

  1. 1

    Pressure cook rice with salt to taste & set aside.

  2. 2

    Peel & chop potatoes into thin slices of about 0.25 inch & put in a mixing bowl. Add 1 tsp olive oil, salt to taste, 1/2 tsp oregano, 1/2 tsp basil, 1/2 tsp pepper & mix well. Put it to grill in your oven.

  3. 3

    In a wok take 1 tsp olive oil and add grated ginger to it. Keeping wok on high flame, add chopped vegetables - carrot, capsicum, red & yellow bell pepper & red cabbage and saute well.

  4. 4

    Add 1 tbsp tomato ketchup & keep sauteing. After about 10 mins, add cooked rice & mix well.

  5. 5

    Serve with garnish of grilled potatoes.

Since I have always been picky with veggies, I keep on devising hacks to include more and more veggies in my meal. That's why you will find that even with most conventional recipes, I always have my own versions ;)Creativity to the rescue!!All of my cooking is "satvik" i.e. without onion-garlic & usually I try to prepare food in a quiet ambiance & with quiet mind.
