A traditional South African red wine sauce.

Steps

Chop Garlic roughly and press with flat of knife blade

Heat olive oil on thick based pan until sizzling
- 3
Add pre prepared garlic and fry until browning
- 4
Add bone broth (or beef stock) and Thyme
- 5
Bring mixture up to a boil
- 6
Add wine once broth has reduced to approximately half the initial volume
- 7
Let sauce boil until all alcohol has been cooked out
- 8
Once alcohol is cooked out let the sauce simmer for approximately 15 minutes (if sauce starts to darken too much add more water)

Take sauce off of stove and cook steaks.

Use sauce to deglaze pan that the steak was cooked in. Let it simmer for a while taking on the flavor of the meat. Simmer until sauce starts to take on a rich brown colour.

Strain sauce through sieve to remove garlic bits, thyme and any other bits that have been collected through the cooking process.

Add the sauce to a clean pan adding butter, salt and pepper.

Let sauce thicken until it is able to coat the back of your spoon.
