Vegetable Chowmein is a popular Asian dish where stir fried noodles are tossed with lots of vegetables and sauces. This recipe is of the Indian street style vegetable chowmein noodles which is an integral part of the Indo Chinese cuisine. This recipe is packed with flavor, veggies and is also very easy to make. It is also vegan and can be easily made gluten free.

Vegetable Chowmein is a popular Asian dish where stir fried noodles are tossed with lots of vegetables and sauces. This recipe is of the Indian street style vegetable chowmein noodles which is an integral part of the Indo Chinese cuisine. This recipe is packed with flavor, veggies and is also very easy to make. It is also vegan and can be easily made gluten free.

Add eight to ten cups of water in a big pot and let it boil. Now add salt and little oil to it and add the noodles. Stir occasionally. The noodles will be cooked in 5 to 7 minutes. Be careful not to overcook the noodles or they won't taste good. When the noodles are cooked, take them out in a sieve and wash them with cold water, drain them a few times and add a little oil to them and mix them well so that they do not stick to each other.

While the noodles are cooking, wash and chop the onion, capsicum, carrot, cabbage, french beans and spring onion onion.

Heat oil in a pan and add finely chopped ginger, finely chopped garlic and finely chopped green chillies and saute until the garlic turns light brown in colour. Now add all the vegetables and cook on high heat for 2 minutes.

Now add boiled noodles to this, add salt, black pepper powder, soy sauce, red chili sauce and vinegar to it and mix everything well and cook on high heat for 2 to 3 minutes. After that add chopped spring onion and mix everything well and switch off the flame.

Now our vegetable chowmein is ready to serve. This chowmein can be served with any Chinese style vegetarian or non vegetarian gravy.
