Today I made Kathyiawadi style Sponge Gourd sev. This vegetable is very famous in Kathiyawar. If the sponge gourd is very green and soft, this vegetable is very tasty. Sev made from gram flour makes this vegetable more delicious. So let's see how this dish of Kathiyawadi style sponge gourd sev is made.
Steps

Wash the Sponge Gourd with clean water, peel it lightly and cut it into medium size pieces.

Heat oil in a pan and add mustard seeds, cumin seeds and asafoetida.

Add chopped green chillies to prepare tadka.

Now add chopped springe gourd pieces to it and mix it well, cover with little water and let it cook for sometime.

Allow it to cook until the sponge gourd is properly set. Now add chopped tomatoes to it and mix it well and add turmeric, salt, garam masala, red chilli powder and coriander and mix it well and let it cook for sometime again.

Now add gram flour sev to it, mix well, garnish with coriander and serve hot.

I have served sponge gourd sev sabji with roti, salad and buttermilk.
