Ingredients

  1. 2 tspsesame paste
  2. 1 tbsplight soy sauce
  3. 1/2 tspdark soy sauce
  4. 1/2 tspChinkiang vinegar
  5. 1 tspfinely chopped garlic
  6. Good pinch of ground, roasted Sichuan pepper, or 1 dash Sichuan pepper oil
  7. 1 1/2 tbspchilli oil with sediment
  8. 7 oz (200 g)Chinese wheat or buckwheat noodles
  9. Handfulpea shoots, green bok choy or choi sum leaves (optional)
  10. 1 tbspfinely chopped spring onion greens

Steps

  1. 1

    Combine all the ingredients—except for the noodles, greens,
    if using, and spring onions—in a serving bowl and mix well.

  2. 2

    Cook the noodles. If you are using the greens, toss them
    into the cooking water for the last minute to blanch them.
    Drain the noodles and greens and add to the serving bowl.
    Scatter with the spring onions, mix well and serve.
