Peri Peri paneer and vegetable toasties

Heat oil in a pan, saute ginger garlic and then add the onions. Saute till they are translucent. Add all the veggies, coriendar and saute for a few seconds

Meanwhile, combine milk and paneer in a mixer jar and grind.

Add the paneer gravy in the veggies along with the peri peri masala and chilli powder. Combine everything well and cook till the mixture comes together and looks thick enough to spread on the toasts.

Meanwhile spread butter on the bread slices. Roast them on a pan at medium to low heat till they are golden. Apply butter on the top surface and then flip. Spread the paneer vegetable mixture followed by mozerella and peri peri masala.

Cover the pan with the lid and cook at low temperature till the toasts get crusty like a toast at the bottom and the cheese melts. Enjoy!
