Ingredients

45 - 50 minutes
3-4 people
  • 1 cupquinoa
  • 2 cupswater for cooking
  • 1/2 tspsalt
  • 1/2 tspghee
  • 3 tbsp chopped each veggie …
  • mushrooms 🍄
  • carrots 🥕
  • capsicum 🫑 all 3 color
  • corn 🌽
  • spring onion
  • french beans
  • 1onion 🧅 chopped
  • 1tomato 🍅 chopped
  • 5-6 podsgarlic 🧄 chopped
  • 1 tbspginger 🫚 & green chili chopped
  • 1small bowl pomegranate
  • 2 tbspchopped coriander leaves
  • 1/2 tspeach spices … red chili powder + tandoori masala + pav bhaji masala +coriander powder +1/4 tsp haldi powder
  • Salt to taste
  • 1lemon 🍋 juice
  • 3 tbspolive 🫒 oil

Steps

45 - 50 minutes
  1. 1

    Take 2 cups of water in a pan switch on gas add salt & ghee when water comes to boil add quinoa & cover the lid & slow the flame 🔥 after 10 minutes remove the lid & see all water evaporate & quinoa done let it cool down & stir with fork 🍴

    Heat oil in a pan add 1/4 tsp jeera when it starts crackle add garlic sauté it for 1 minute add onion sauté it for 2-3 minutes

    Add tomato 🍅 cook it for 2-3 minutes add all veggies & cook for 3-4 min on medium flame 🔥

    Add spices mix it add 2 tbsp water & cook for 1 min

    Add Cook quinoa mix it well correct the seasoning

    Add chopped coriander + pomegranate + 1 lemon 🍋 juice

    Mix it well & serve hot with yogurt & green chutney
