Wash and chop red pumpkin with skin into big pieces.

Heat a pan add oil and mustard seeds.Allow to crackle.Add asafoetida, curry leaves, turmeric powder, Fenugreek seeds saute for a few seconds.Add pumpkin pieces and water.Add garam masala, coriander powder, chilli powder salt and cover upto pumpkin gets tender and cook well.

Dry roast grated coconut and poppy seeds.Powdered them.Add this powder and tamarind water.Add piece of jaggery.Bring to boil and turn off the gas.

Add chopped coriander leaves.Our red pumpkin curry is ready to serve.
